My companion fair code is expiring by the end of December but I have no clear plan to travel due to pandemics. Yes, you just need to have your companion code attached to an itinerary. Next year, you can change dates and destination. You will then pay change in fare and companion code will stay and perhaps taxes and fees might be slightly different, depending on destination.
Follow James advice regarding the booking date to get the most out extending your code use date.
