I always stay at the Hotel Ibis Seoul. It's part of the Accor Group, and is typically $75-80 a night. Very clean and conveniently located. It's located in Kangnam, and is about 3 blocks from the Korea City Air Terminal building where you can take the shuttle bus.

I know you can use Visa/MC pretty much everywhere. I don't have AmEx, but I'm pretty sure that is widely accepted too, since my fiancee lives there and she has one
I would get cash from the ATM at the airport to save transaction fees and potentially crappy exchange rates. I believe the KCAT shuttle does accept credit cards, but I'm not certain. If you are flying on Asiana or KAL, you can also go clear immigration and customs and check your baggage at KCAT before you board the shuttle.
