FWIW, the Pacific Rim has historically offered a much more generous breakfast benefit for Virtuoso and Travel Leaders Select bookings.

- the Fairmont Waterfront has generally only allowed the buffet breakfast (which is good, but not spectacular)
- the Fairmont Pacific Rim has generally offered a choice between the breakfast buffet (which is excellent!), a la carte breakfast and even in-room dining.

There's something civilized about starting the day with steak&eggs, a bowl of mixed berries and some champagne.
I have no objection paying a high price at a hotel which offers generous elite benefits such as great suite upgrade and superior breakfast, in fact in many cities I do exactly that. Sometimes a hotel can be poor value for people with no status because the entry level rooms are overpriced, while at the same time being great value for loyalty program elites. Sometimes it's not black & white.

Given that Fairmont Waterfront currently offers a nice a la carte breakfast which can be delivered to the room, it seems to have narrowed the gap with Pacific Rim in that regard. It's probably still a notch below Pacific Rim but I would not consider breakfast to be a weakness at Waterfront at this point in time. Hopefully they will retain this feature once covid starts to ride into the sunset!
