Approved with TX Deferred Adjudication
I thought I share this, incase someone else is in a similar circumstance....
In 1991 I was arrested in Tx under a Credit Card Abuse charge, which is a 3rd Degree Felony. I received Texas's deferred adjudication, which I had to pay court costs, pay the ~600 dollars back for restitution and then 3 years probation. Technically Texas doesn't consider this a conviction after you complete the terms of your deferred adjudication. Though it is still on your record and while you can get it sealed it cannot be expunged.
Fast forward to around 2014 I tried to get Global Entry, did my interview in Los Vegas while I was there for a trade show. They took all my Texas court docs but received a denial afterwards. I even tried to appeal with a letter to the CBP Trusted Traveler Ombudsman - no dice.
Fast forward again to 2020. I heard from a person they had a similar deferred adjudication as mine and they were approved but their interview was in Texas. So I thought perhaps I'll give it a try again here with a interview in Texas. After a bit of wondering if it was worth the cost (and pain) to get another denial, I realized I could put the entry fee on my Amex, which it refunded that cost. So at least all I'd have to worry about is being disappointed again!
I had my interview on Nov 17th and today on Nov 25th I got my notification about my application. It was a letter of denial - can't say I was too surprised. Then about 20 minutes later I got a new notification about my application. To be honest, I almost didn't even go to log in to check what it was about - how many times do I need to see you are denied! However it was that my application was *approved*! Not sure how that happens or what caused the status to be flipped in under 30 minutes but I am thankful. Now when I travel with co-workers, I won't have to try and answer, "why don't you get Global Entry"!
I suppose it could flip again... but if it does I'll report back.

Today, Dec 5th, I got and activated my Global Entry card! YAY Me!
