I don't make them at home either, but I order them every now and then as a salty snack at the pub and the gravy always comes on the side. I guess for poutine the gravy and curds is the dish and having them on the side would be like deconstructed poutine.

They sound pretty good. I had a hot bbq chicken roll with stuffing and gravy for lunch from a place down the road.
