At DTW there is Rio Wraps, at MSP there is Sola Smoothies, at MEM there is ...nothing vegetarian (I'm burning WorldPerks FF miles on this trip thru IAH)

I can't tell you anything specific but the best food options at IAH are by far in Terminal E. The two food courts there and the two full service restaurants in the terminal are probably your best bets unless someone else knows of a specific place.
