The story I've heard with regard to catering First Class (including transcons) with a choice of a cheese plate or a curry wrap is that both involve less personal handling. I can't imagine any more handling would be involved were Alaska to bring back the foil covered hot casserole type meals by chef Tom Douglas. As you may recall, these meals were for sale back in economy and were discontinued with Alaska's acquisition of Virgin America and its Airbus fleet - which had no ovens back in the main cabin with which to heat them. I guess hot meals weren't cool enough for those hipsters that flew coach on VA!
I agree regarding the Tom Douglas bowls and you could still serve them in F since the Airbus fleet has ovens up front. They are already using the oven to heat up cookies anyway.
