While Simon is not an option for Amex, you can use your Amex card to buy VGCs at a variety of supermarkets. You have to do some exploring to find the $500 GCs but they do exist. Read the thread on buying MOs at WM where this is discussed in some detail

You will also need to be able to liquidate the GCs and to deposit them into institutions that will not shut you down for depositing too many MOs.

The most active threads on this site will be the most useful for you to read. Start with the Wiki if one is available, and don't delve back more than 2 years since MSing now is nowhere equivalent to what was going on in 2019.
