I think that you have to be much more specific about your question. There are many Amex cards out there and each one has different criteria for sign up bonuses as well as minimum spend.

Considering getting the AMEX Plat, but making that $5000 spend will be a challenge. I normally MS with Simon Mall GC, but apparently those are a no go for AMEX.
