You seem to like making things hard for yourself. I am not a beet eater but I see the pre-cooked ones available everywhere...just beets in a shrink wrapped package so you don't have a beet mess everywhere. And you can still make a salad without beets. Dark leafy greens (spinach, arugula) are good for you. I also buy pre-washed lettuce a lot of the time. And I use anchovy paste.
Of all the thing not allowed as a kid, it is odd that you weren't allowed to have red wine vinagrette.
