Do you have any official source confirming this (ie: transiting through a high risk country and stay airside)?
The reason i am asking is because i am planning to go to SA in November.
Right now i have a return ticket LHR-JNB booked with BA but i can easily spend 10 in Germany before flying to SA.
i would fly to FRA 10 before flying to SA, stay in Germany.
And then fly back FRA - LHR, stay airside and catch the BA flight to JNB on the same day.

Therefore if i could have some evidence to present to be allowed to board and/or enter SA, it would be helpful. I couldn't find any so far.

Thank you.
Well I believe lmk has a datapoint, since he successfuly managed to enter ZA from NZ (low-risk) via Qatar (high-risk).

I am basically doing the same thing as you next month, travelling TXL-LHR-JNB (Germany being a low-risk country and UK a high-risk country atm).

Here is a sentence pulled from a rather long-winded announcement by ZA Department of Home Affairs dated October 04 2020:

Immigration officers will be required to assess the movement and place of origin of the traveller and not the country of origin of the airline concerned.

This would seem to indicate that you indeed are able to transit a high-risk country if you stay airside. It appears that the onus is upon you to prove that you have been in a low-risk country for x days before commencing your journey. lmk has just done this
