I know they do not refund the difference if I rebook at a lower fare but will they keep the original fare stored if I rebook a second time? For example, the fare goes down with the first change and then up with the second change)? I doubt this.
But why do you book this far out? Most likely the prices will drop much closer to departure. Most tickets with European LLC's har bought a few weeks out where the fare are at the lowest. When you buy this far out you are sure to pay a much higher fare.

As for your question, my experience from changing FR tickets is that you keep the original amount paid - it not about fare classes as such, but the amount paid will be applied towards the new ticket (save for any change fee etc already paid)

Anyway, this is RyanAir so I can almost guarantee you that you will have to pay any applicable fare difference and that a second voluntary change will not be without change fee. It will most likely be cheaper just to buy new tickets, but you really need to be more careful about the timing.
