I will third or fourth Sam Choy's Breakfast, Lunch & Crab. You'll have more than enough time to rent a cheap Pricelined car or the "TheBus" to get to the Nimitz location and it'll also help you see a little more of the island, though it can be a little industrial.
Let me offer another suggestion, though. Rent a car, get a good plate lunch, drive to the nearest beach and have a nice relaxing meal there. If you're interested, I can advise you more on which places would serve up the best ono local food, but this might be a good way to start your vacation in another tropical place.
Lastly, this topic has been covered before countless times in the Hawai'i board. A search on that forum will bring up a handful of threads regarding where to eat during a long layover (or other suggestions for alternative things to do).
