The first AP would have to be wired to the router/switch, assuming you are using a USG as the router. From there you can mesh them together if you want, but wire is always king.
Yes, one of the APs in the chain needs to be plugged into the network. Also I think the non "mesh" APs are limited to a single wireless hop back to the one that is plugged in. The "Mesh" ones can do multiple wireless hops.
