From CPT I think there is no way to keep the costs down as their is only one airline operating the route but again the travel time isn't that great really, if you are already in the 'vicinity'. To keep costs reasonable, do look at both LVI and VFA and if you have AA miles look at redemptions through BA (Comair) but to be honest they are looking really sporadic to me for next year. (I know you said not to mention the virus, but it really may make a big difference to what airlines, routes and schedules are still operating in 2021).
I think your point about the future operational status of the airlines flying between South Africa and either VFA or LVI is an excellent one. One of the larger operators is SA and they are in the middle of a serious financial crisis. I am sure smaller carriers will fill the void, if there is tourist demand. But we won't know what it looks like for several months.
