If I’m a business and I’m constantly sold out of something that’s a good thing, not a bad thing. A bit odd that they’d remove it from points inventory due to people booking it up.
On another note I’m checking several properties that have Premium Suites Available but they aren’t bookable with points. Two would be Hyatt Regency Richardson and Hyatt Regency Dallas. According to Hyatt’s page on this Standard and Premium Suites should be bookable but at these properties neither are bookable, yet under cash rates they are.
Unless things recently changed, suite and premium suite full point awards have always been capacity controlled. So unless that's changed, just because a suite is available for cash does not mean it will be available for points. Many hotels have never offered premium suites for points and still don't, others did but only on certain dates, and some seemed to offer them for every night.
