(The "friendly" Southern Pacific was hated in its final years of passenger train operations and apparently had a deliberate strategy to take things out on its passengers: make its trains as unappealing as possible to make them as unprofitable as possible to try and get the ICC to let them abandon them. SP's replacement of real dining cars with despised automats was one notable example of this.)

Quite true on the SP - sorry to say. Interestingly, the Sunset Limited bore the brunt of the cutbacks and surly service. The west coast trains (Daylights, Lark, Owl, etc) didn't fare quite so badly.

It's hard to imagine an airline the size of AA intentionally implementing such a strategy, but with Doug Parker at the helm, I could easily see them bumbling into it...
