Yes, I rechecked Cavo Tagoo and it's actually that there was no availability for one of my dates rather than it being closed altogether, must be the only hotel on the whole of Santorini to have sold all its rooms right now!

Call the hotel direct if you haven't. Quite likely they are holding back some rooms.
