Interested to hear what you decide on and how your experience was! Enjoy Santorini, it will be the only time you get to experience the island as calm as it is right now!

One more thing: I have friends who stayed at Cavo Tagoo two weeks ago, so you might want to reconsider that since the hotel is already open.
Yes, I rechecked Cavo Tagoo and it's actually that there was no availability for one of my dates rather than it being closed altogether, must be the only hotel on the whole of Santorini to have sold all its rooms right now!

My conclusion following a lot of research was that if you are looking for modernist design/newly refurbished luxury, the nicest looking seem to be Cavo Tagoo, Andronis Arcadia, Andronis Concept, Grace, ISTORIA and Katikies Garden. Chromata sort of interesting too but I think the rooms look a bit too basic.

I booked Katikies Garden as I am a sucker for the whole "heritage building refurbished to be modern" aesthetic and wanted to spend some time in Fira whilst there aren't cruise ships there. I was then promptly emailed by the hotel to say they won't be open on my dates and I was being moved to the regular Katikies in Oia instead, so I now have bookings for two hotels 5 minutes walk apart in Oia. Will report back. Intend to at least visit Chromata for drinks whilst I'm at Katikies.
