The texture of the Cathay broth for the Dan Dan noodles is a bit off for me. I think it’s that you ideally want the sesame oil and chilli oils to be unmixed and so creates a bit of extra complexity vs. the slightly one dimensional flavour and mouth feel of the Cathay noodles.
Even so, I enjoy them and in a normal year would partake 10-20 times at least all around the world
