There will be a difference of about 60,000 points less on the 2nd redemption, will the excess points remain usable for a future 241 redemption in conjunction with the points in my account?

Everything stays in the FTV, 2-4-1 voucher, Avios, and cash for TFC. So you wouldn't get anything back in your account, but the FTV would hold everything. They're issued quickly on cash bookings, within minutes, but I don't know about redemption or 2-4-1s.

The main difference by going down the FTV route is that you don't lose 35 pounds per person, and that if you choose not to book after all, you can use the FTV for travel into 2022, which may extend the expiry of your 2-4-1 voucher.

Regarding getting your Avios back if the new booking is less, you'd either get a new voucher with the remainder or they'd come back to your account but I can't remember the threshold. Same with cash for TFC.
