Anyone have a good recipe for dan dan noodles in the style they're served at the Cathay Noodle Bar? I have no idea if those are traditional dan dan noodles or if they are modified somewhat for the western palate given the mix of travelers on Cathay, but in either case I love those noodles and have been trying to find a recipe to use in an attempt to recreate them at home since I won't be enjoying them at an airport any time soon.

Note - while I have never tasted the dan dan noodle from CX lounges, Lee Kum Kee was once a CX catering partner (for the cup noodles onboard). So it is possible that this recipe (and sauce) is exactly what CX is using.
