I would really like to experience more of the authentic Chinese regional cuisines. I love American Chinese food but honestly it more and more seems like fried stuff in the same brown sauce no matter what you get. Of course, the Chinese takeouts here in Maine are all pretty lousy to begin with.
To this day the best Chinese meal experience I have had was in Beijing on a class trip. I and three of the class' five Mandarin speakers got separated from the group and decided to go to lunch. We wandered into a random noodle place. My classmates spoke Mandarin but couldn't read it (all grew up in the US) so the waiter explained various dishes to them and they ordered what seemed good. There was a shrimp and pineapple dish that I loved, as I recall, but they were all great.
