Back to the original question, my very favourite Chinese foods would probably be:
- Morning glory, either with garlic or with minced pork and chilli as I see more often in Taiwan
- On the topic of Taiwan, xiao long bau have to be on any list
- I like different BBQ meats - from duck to pork and chicken. Done well with the right glaze, these taste great
- Steamed white fish, like cod or seabass in something like honey or garlic. I tend to think that the Thais do it even better, but the Chinese version is pretty amazing
Xiao Long Bao is actually from the Jiangsu/Shanghai area, with a variation called Sheng Jian Bao (Pan Fried Soup Dumplings) that is also popular in the Yokohama Chinatown. BBQ meats are a hallmark of Cantonese cuisine (where they are roasted), though there is a Braised Version that has a glaze as well that is unique to the Teochew style in Fujian.
If you enjoy steamed white fish in the Chinese version, you can try to do it at home by getting the Tai Hua Seafood Soy Sauce. Just add green onions (scallions), ginger and sesame oil with the soy sauce and pour it over the steamed white fish. I do have to mention I love the Thai style with lime and lemongrass as much.
