For properties in the United States, I agree booking for 2 adults and notifying the hotel of children (even at check-in) will work fine. For Europe, it can be an issue and you should reach out to the hotel directly to see if they have family rooms available. Not sure what applies for South America.

You are making this too complicated. There is never an additional charge for an
infant, nor do you need to book a family room. Just book the room and call ahead for a crib (if you want one).
