No issues booking Aegean/Olympic combos via United.com here, but it could be your dates. Sample routes: NYC-LHR-ATH, NYC-LHR-ATH-JMK, BUF-EWR-ZRH-JMK for Aug 2020. Did you call?

For me, LifeMiles is showing worse availability than UA in this regard.
