They should be flying then and you should be allowed into the EU. It’s hard to tell at the moment even if they do restart, which flights will operate but being allowed to rebook until 31st March 2021 is in line with their policy. If you have flexible tickets, then use that instead. It might be worth holding off until nearer the time to see if the US will allow the flight to operate or if LOT is going to operate it.
