Not quite true. James Bond wears two watches in Thunderball. He uses his Rolex Submariner to tell the time, but he relies on a modified Breitling Top Time when he needs a Geiger counter.

So far 007 has only sported a TAG-Heuer watch once, in Timothy Dalton's first outing in the role. He did wear a Rolex but since 1995 he has opted for Omega.
