Between 6D/E and 1D for solo pax what is your recommendation? I wear hearing aids and if there is a lot of background noise, I can't hear well. Also I want to get max sleep on the flight.
1D has less "white noise" from the engines, but occasionally more galley noise. 6D more engine noise, but I've always had good luck with less galley noise (or noise from other passengers) in the smaller cabin.

For me the galley / other passengers noise might wake me up and noise cancelling headphones sort out the engine white noise (that I otherwise loathe), so I prefer the mini cabin.

In your situation it sounds like minimizing the background noise from the engines is a priority, so definitely ... 1D. (My seat preference on the 789 is roughly 6D, 6E, 1D, 6B, ... so for my personal preference scheme you'll be fine with any of the available choices :-) )
