I've stayed at both hotels. Definitely go with the Hilton.
The Hyatt is in New Belgrade with nothing remotely interesting (outside of a new-ish mall around it). Depending on the traffic, it can take a bit to get to the interesting part of the city as traffic can bottleneck going over the bridge. Hilton's location isn't perfect (roughly 1 mile from Trg Republica, but is infinitely better than Hyatt's. The Hilton is also newer, more modern, nicer rooms, better staff.
