I assume that this would be the norm for only a short while.
When more passengers would resume traveling, it would be difficult for the lounge staff to serve everyone and allow social distancing rules or enforce a lower capacity. ( not ZRH specific )
Plus, handing meal vouchers for eligible pax valid at airport vendors could be a short-term solution until lounges open.
