Old Amsterdam is, funnily enough, not that old. It's a recent invention, has only been around since the mid 80s. The cheese itself is neither old, nor does it have anything to do with Amsterdam. It's just a variety of Gouda cheese, admittedly a rather nice one. The name is a marketing gimmick, and a very successful one too.
I also very much doubt that KL serves Old Amsterdam, they have most likely gone for something cheaper. Even in business class. They are Dutch.
Good luck getting served nuts and cheese in WBC these days. Whatever you do get is probably not worth the effort of removing your face mask. Policy these days seems to be to do everything to make the air travel experience as unpleasant as possible, no doubt in an effort to encourage the passengers they so desperately need to return in large numbers. They have yet to follow RJ's example (disposable gloves and disposable shoe covers (

) in additions to masks) - but they are likely thinking hard about it. Trust them to get it wrong.
