Try booking JFK-LCY or JFK-LGW and LHR-AMS; less risky and 100% you would be able to reclaim your bags in London.

If you transfer as Heathrow-Heathrow or Gatwick-Gatwick, the AA agents in the USA may refuse to check your baggage until London as they are aware of passengers skipping these last legs.
In normal conditions, you would be only awarded for the TP's for those legs you fly. However, it would be safer to do a B2B to Amsterdam on Saturday, if you have nothing else to do.
