Mark Cuban did a study on how well businesses were following Texas' guidelines for reopening and he found that from the businesses that did reopen, close to 75% seemed to support contactless payment. That number seems to closely match what the EMV map indicates, anyway. However, there does seem to be variation across merchant categories (though I haven't been able to figure out more on that).
