Sweden of course is not listed as one of these countries, so I think everything should be operating as normal, I am however looking for some confirmation that this remains the case.
And if not, will there be any type of check at the gate when boarding in Stockholm? I am concerned about entry restrictions since my fiancee is not an EU citizen, IATA and German documentation seems to indicate her entry would not be allowed (she is not EU citizen and currently has no residence permit for Germany, though she has one in Sweden).

Ah, you did not say that you would be travelling with someone who is currently not permitted to enter Germany. In this case I doubt she would be permitted to board the plane. Exact details matter about your citizenship, residence, and purpose of travel. The wording on the German Ministry of the Interior is:
- Persons who are not EU citizens and who have no long-term right of residence are not allowed to enter unless they have an urgent reason to do so. Entry for purposes of tourism is no longer allowed.
