If you have an automatically renewing annual policy, then you are on more solid ground but that still wouldn't likely cover trips booked after COVID-19 made it to Europe.

what, exactly? Even after this was declared a pandemic, the policies I've seen
still cover you for cancelled travel due to your own sickness from Covid-19. What might happen, but I haven't seen it yet, is some policies might start to exclude Covid-19 as a sickness that triggers coverage.
Regardless, I don't think concern you might have (however reasonable) about travel because of Covid-19 has ever triggered coverage for any of these policies.
