So I have a late May flight Canada to USA. It was ticketed in February. When I go in to the flight, there is only the option to cancel. I'd be happy to rebook this at Christmas time but no option to do so as it shows in their how to guide.

As with a lot of things AA you just need to call.
When you call, you can change to new dates in December for no fee. You will not get a credit if the new flights are now cheaper.
If the new December flights are cheaper, and there has been a schedule change since you booked it (likely), then you can ask to just cancel for a full refund, then rebook whatever you want.
