They are all options in the GUI, although at the time I did it you needed to be running the beta firmware. I think that firmware is now the released version for the AR300M, but could be different for the AR750.

There's an option for the guest network to go via the VPN, and an option for each individual client to do so as well. I forget the exact details on how to do it, but it's covered in a post on the GL-iNet forums.
