Example: I am already a Platinum and reached 350XP, therefore, I maintain my Platinum status (because I reached 225XP), and I will rollover 125XP (i.e. 350XP minus 225XP)? Or will I rollover 50XP?

No the reduction is only to support people to maintain status. This does not increase rollover XP so in case of vinnyc rollover will be 50 XP.
