New Zealand is my 15-year-old son's all-time favorite destination for all the activities mentioned above. The only problem is going there when the weather's good means school can be an issue.

Greece and Italy are more of his favorites. Whether or not they'll be hot depends on when you go. Banff is good for hiking, canoeing, biking, seeing wildlife, and the temps never get too terribly high.
