If I were you, I wouldn't worry too much about it. If anything, your the chances are even lower now with less people in the airport and on the planes.
She's in her early 60s so slightly elevated risk. But that's been my thinking that flights will be really empty--SFO-ORD is crazy empty! Probably won't go visit my grandparents (same city) as they're in their 80/90s. The nice thing about these low fares and massive flexibility is I don't have to make any decisions until I decide to go and even then can back out.
