As we were approaching we saw the people standing up, grabbing the table and the chairs and moving them all close to the wall of the building housing the restaurant. A car coming from behind us "eased" through the space made free, and then the people grabbed table and chairs and moved them back to where they were before and continued their lunch!
Though we stayed in Spello, my favorite Umbrian town was Bevagna - the hill town without the hill. One of our most memorable meals was at redibis in the Roman Theater. At the time they featured a prix fixe dinner based on Maria Angeli's early 20th century cookbook of Umbrian classic dishes.
