Hertz has a car class (U4) for V8 convertibles - consisting of (as far as I know) only the Mustang GT and the Camaro SS. I checked a random date in March, and there is availability for that car class at SNA.

Otherwise I think I may just make a few reservations I can cancel, walk the lot on my way in, and go with the rental agency that has a V8 out there.
