There's no live music at all (people playing instruments and singing) in any pubs or bars or anywhere during Ramadan. You won't hear loud music either. Some brunches (such as We Brunch DXB which is pretty well enclosed when the terrace is shut off) will push this and still be fairly loud.

Regarding music poolside, there's a fair chance you'd be asked to put headphones on.
