I also do not know my culture very well, is CNY equivalent to NYE? Meaning should I expect a big event that I will have to pay extra for if I stay during that time? The 12th is pretty much right in the middle of when I want to stay so that isn't the greatest but it is what it is.
If your preferred dates fall between two drops and you need dates in both drops to take advantage of the 5th night free you’re probably going to need lots of luck for there to still be availability from the first drop when the second drop happens. You could try to reserve the rooms that are available now and then cancel them and rebook the entire stay when the second drop happens, but as others have pointed out there is no guarantee the cancelled rooms will immediately go back into inventory. Further, there is no guarantee you would get your points back immediately so you might end up completely missing out. It is best to just pick dates that fit entirely into one drop.
I don’t think CNY has any mandatory events at the hotel. The mandatory Xmas and NYE event are very clearly listed on the hotel’s page, but there is no similar listing for CNY. You could always just email the hotel to ask. I merely brought up CNY because it is a popular time for travel so there might be competition to book rooms.
