Every Skyteam flight will qualify for FD miles starting tomorrow, with very few restrictions (certainly not the international business sectors you mention). Your itinerary would net you around 25K base miles, good for 50K in business.
Flying through CDG rather than AMS yields ~466 more base miles R/T.
Choosing FD partner MH and KUL (only 3 weekly flights to Xiamen though) instead of KE and ICN would add about 1000 base miles.
AF/KE/MH's current business seats are certainly inferior to KLM's, with 50" pitch and 2-3-2 main deck seating. All three are slated to introduce 60" lie-flats eventually. KE's service in business is generally more consistently attentive than AF or KL's, although the crews on the usually sparsely populated KL WBC cabin on AMS-ICN have been good in my experience.
However, pending its C/F seating upgrade, KE is offering its F seats at a very moderate premium, around 10%, ('Business Plus' or something similar) on its 3-class planes used on non-premium routes. Though not state-of-the-art, those seats are considerably more spacious than any business seat.
