By magic. After security and before customs if you have a checked bag you wait for it to be dealt with (elsewhere). Watch the big board for your name so you can move on. No clue what happens if there is a problem. Customs guy will also take an extra step.

Random. I've been through the same time for the same flights over several months and have been any thing from 0 wait to 20 minutes each at security and customs, and the hold rooms are much larger then that.

If AC sold you the ticket, they think its long enough time.

No. But you can go landside and use those. Possible, and perhaps "allowed", but you'd mess up their system if you have checked bags, I'm not sure I'd advise it.
