Wouldn't adding funds to an existing gift card be effectively the same? You're still just buying value toward a future purchase. The only difference is whether you have to keep track of one plastic card or multiple (depending on how long you hang on to them).

As someone else said, probably the better value in the GC route is the ability to effectively spend your Amex credit at an Off 5th store.
