I presume you're referring to intra European flights? Otherwise you're potentially going to get an incredibly long list of irrelevant posts about flights in other parts of the world.

Hainan Airlines fly their 787 on a triangular route China-EDI-DUB-China which alternates China-DUB-EDI-China on other days.

I think SQ fly their A350 ARN-DME-SIN and v.v but not sure whether you can just purchase the ARN-DME-ARN sectors as a stand alone ticket.

Air Europa deployed their 787 on LGW-MAD most days in July/August in previous few years
