There's definitely differences in the individual lounges, although it depends much on time-of-day of visit (for buffet food or sit-down quality/availability), and what you want from a lounge.

Overall, I don't think it's worth changing a flight to choose one particular Polaris lounge over another though. They are all very nice lounges (compared to what UA offered beforehand).
